Inspector was informed by Lynn that prep sink is used to wash hands, wash dishes and thaw and wash produce. This was not observed during the inspection.
Inspector instructed Lynn that all dishes must be washed in 3 compartment sink.
In regards to the prep sink the County of Merced recommends choosing 1 basin that is exclusively used for hand washing allowing the other to be used for meat and produce prep. As such, we would also recommend labeling the sinks and posting sanitizing guidelines for swapping between produce and meat prep.
