2. Observed lack of one inch minimum air gap between the drain lines from the ice cream cooler and the rim height of the floor sink. Repair or modify drain lines so that the distance between the lowest edge of the drain lines and the height of the floor sink rim allows for a minimum of a one inch air gap.

FRONT SERVICE AREA: The custom Front Counter has been conditionally approved so long as upon further inspection all surfaces are to remain smooth, easily cleanable, non-porous, non-toxic and do not create opportunity for debris accumulation. If it is found to not meet these minimums MCDEH may require repair or replacement.

NOTES:

This facility has removed a neon light from above the Front Service Area. This light may only be replaced by one that meets the CA Retail Food Code.

11-01-2023 All utensils and equipment shall be fully operative, clean, and in good repair. (114115, 114175). All utensils and equipment shall be approved, installed properly, and meet applicable standards. (114130, 114130.1, 114130.2, 114130.3, 114130.4, 114130.5, 114130.6, 114132, 114133, 114137, 114139, 114143, 114153, 114155, 114163, 114165, 114167, 114169, 114172, 114175, 114177, 114180, 114182) 1.00 Equipment food-contact surfaces and utensils shall be clean to sight and touch. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other debris accumulations.

Keep all food facilities, and all utensils, display cases, windows, counters, shelves, tables, refrigeration units, sinks, dishwashing machines, and other equipment or utensils used in the storage, preparation, sale, service, and display of food, clean, fully operative, and in good repair.

The non-food-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Equipment shall be reassembled so that food-contact surfaces are not contaminated.
1. FRONT COUNTER: Observed Buildup of debris in large crevices between the pull-out drawers in the front counter, clean and seal to prevent buildup of debris and provide for smooth easily cleanable surfaces.

2.PREP AREA: Knife holder was observed mounted (drilled) to wall. This equipment is required to be easily cleanable. Remove from Wall. If you choose to replace, replace with a holder that can be readily dismounted from the wall and cleaned in the 3comp sink.

3. WARE-WASHING: Holes in 3-comparment sink were filled using silicone. Repair so that the holes are smooth, easily cleanable, non-porous, and do not create opportunity for debris accumulation.

4. FRONT SERVICE AREA: Wall directly opposite of service window was observed to be missing tile on the entire bottom edge of the wall below the Window. Repair so all unfinished surfaces are smooth, durable, easily cleanable, non-porous, and do not create opportunity for debris accumulation.

5.FRONT SERVICE AREA Observed hole cut out of the metal grade that is installed on the wall directly opposite the service window. The hole was being utilized to allow plumbing through the wall. Repair this plumbing transition on both sides so that the holes is smooth, durable, easily cleanable, non-porous, and does not create opportunity for debris accumulation. Seal any gaps less than a 1/4 of an inch.
