1. BLUE STORAGE FRIDGE. Observed this unit still had the blue packaging film. remove this film as it is not a smooth and easily cleanable surface. 2. ICE MACHINE NEAR OVEN: Observed ice machine was stored on top of a wooden pallet on wheels. This pallet was not sealed. Raw wood shall be sealed with a smooth easily cleanable and nonabsorbent seal.

Floor surfaces in all areas in which food is prepared, packaged or stored, where any utensil is washed, where refuse or garbage is stored, where janitorial facilities are located, and in all restrooms and hand washing areas shall be smooth and of durable construction and made from non absorbent material that is easily cleanable.
Each permanent food facility shall be fully enclosed in a building consisting of permanent floors, walls, and an overhead structure that meets minimum standards. Food facilities that are not fully enclosed on all sides and that are in operation on January 1, 1985, shall not be required to meet the requirements of this section until the facility is remodeled or has a significant menu change or a change in its method of operation. Full enclosure is not required for dining areas and certain other areas when approved for outdoor food services.

1. FRONT HAND WASH SINK. Observed tile underneath is broken and no longer smooth and easily cleanable. repair. 2. MOP SINK observed wall behind mop sink had been partially removed. repair this wall to prevent water damage and growth of contaminants. 3. ENTRY DOOR FRO OUTSIDE NEAR REGISTER. Observed this door had large gaps that could provide entry of vermin overnight. Seal these gaps. 4.* ONGOING CONSTRUCTION - Facility shall provide a temporary barrier between operational space and construction space. This barrier shall not permanent. Update MCDEH of construction status within 6 months (2.1.24) if construction is not complete send an update on the status to MCDEH prior to 2.7.24. If an update is not received a follow up inspection charged at our current hourly inspection rate will be performed to confirm status. This barrier shall be temporary and shall be removed and replaced with a permanent barrier should the adjacent facility remain under construction indefinitely. Construction update shall include estimated completion timeline.

Handwashing facilities shall be sufficient in number and conveniently located so as to be accessible at all times for use by food employees. Employees shall not clean their hands in a sink used for food preparation, warewashing, or in a service sink or a curbed cleaning facility used for the disposal of mop water and similar liquid waste. Do not place objects in front of the handwashing station, and do not place items, utensils or wiping cloths in the handwashing sink.
Handwashing facilities shall be equipped to provide warm water under pressure for a minimum of 15 seconds. If the temperature of water provided is not readily adjustable at the faucet, the temperature of the water shall be at least 100°F, but not greater than 108°F. Soap shall be provided in approved dispensers at, or adjacent to, handwashing facilities (no bars of soap). Single-use sanitary towels or hot-air blowers shall be provided at handwashing facilities in approved dispensing devices.

HAND WASH IN FRONT Observed paper towels were stocked outside of dispenser. stock inside dispenser to prevent contamination of towels and hands. 3. Observed that the hand wash sink inside the dishwashing area did not have hot water of 100-108F. Repair sink so it has water between 100°F and 108°F.

1. 3-COMP SINK Observed staff did not have access to the dish washing sink during operating hours and did not know where the keys were. After calling owner the keys to the room that has the 3-comp sink were found and the facilities staff were able to access the dish washing sink. Do not lock this room. This room shall be unlocked at all times of operation to facilitate dish washing as needed. 2. SANITIZER Observed that when asked which sanitizer was being used for dishes that the facility was using scented chlorine. cease this practice as scented chlorine is not an approved sanitizer due to additional added chemicals. facility was observed to have standard chlorine and were directed to use standard bleach.

Facility observed to start construction on the facility without approved plans. The facility currently has plans with MCDEH that have been denied and sent back for revisions. Cease construction until you have received approved plans from MCDEH and other agencies. Existing plans did not include the adjacent facility, ensure to include this area on your next submittal of your current plans if it will be a part of the facility.
