4-10-2019 The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair. Floor surfaces in all areas in which food is prepared, packaged or stored, where any utensil is washed, where refuse or garbage is stored, where janitorial facilities are located, and in all restrooms and hand washing areas shall be smooth and of durable construction and made from non absorbent material that is easily cleanable.

Each permanent food facility shall be fully enclosed in a building consisting of permanent floors, walls, and an overhead structure that meets minimum standards. Food facilities that are not fully enclosed on all sides and that are in operation on January 1, 1985, shall not be required to meet the requirements of this section until the facility is remodeled or has a significant menu change or a change in its method of operation. Full enclosure is not required for dining areas and certain other areas when approved for outdoor food services.
(1) REPEAT: Observed edges of tile in areas near the glass reach in display coolers, and near the elevated area behind the registers still lack an appropriate coved finish. Some tiles broken / missing in areas near edges especially. Appropriately repair so as to provide floor surfaces and coved junctures that are smooth and easily cleanable. Floor surfaces in all areas in which food is prepared, packaged or stored, where any utensil is washed, where refuse or garbage is stored, where janitorial facilities are located, and in all restrooms and hand washing areas shall be smooth, easily cleanable, non porous, meet a commercial grade standard, and be coved at the juncture of the floor and wall with a 3/8 inch minimum radius and shall extend up the wall at least 4 inches.

(2) SECOND REPEAT: In the kitchen / food prep area, observed the interior of the kitchen walls and ceiling still show some improperly finished areas, peg board patches, wires not in conduits, girders still visible, insulation visible, gaps around ducts in drywall, etc. Appears to be in the same condition as during the last inspection, no additional repairs completed. Repair / replace the kitchen walls and ceiling such that they meet a smooth and easily cleanable commercial grade standard. Check with the appropriate agency or agencies and obtain any required building or other permits, before beginning work.

The walls and ceilings of all rooms (except bar areas, dressing rooms, dressing areas, locker areas, offices and store rooms where food is only stored in unopened shipping containers) shall be durable, smooth, nonabsorbent, and easily cleanable. Examples of acceptable surfaces include gloss or semi-gloss enamel paint over smooth gypsum board, FRP (Fiberglass Reinforced Plastic paneling), and stainless steel. Materials such as exposed brick, concrete block, rough concrete, rough plaster, and textured gypsum board are not acceptable. Vinyl coated acoustical ceiling tile may be used. Attachments to walls and ceilings, such as light fixtures, mechanical room ventilation system components, vent covers, wall mounted fans, decorative items, and other attachments, shall be easily cleanable.

Products that are held by the permit holder for credit, redemption, or return to the distributor, such as damaged, spoiled, or recalled products, shall be segregated and held in designated areas that are separated from food, equipment, utensils, linens, and single-use articles. All returned or damaged food products and food products from which the label has been removed shall be separated and stored in a separate area and in a manner that shall prevent adulteration of other foods and shall not contribute to a vermin problem.



(1) Observed retail food items with black "XX" on a shelf in a customer accessible area that are being held for vendor returns. Remove or re-sign these items so as to prevent unintended sale to customers. Store customer accessible food only in undamaged containers, in a manner so as to protect it from the possibility of adulteration or contamination. Stored items now in a marked area to be sent back as vendor returns. Corrected during inspection.

(2) Observed bins of rice and flour in the kitchen food prep area where lids are loose / not fully closed. Ensure food not currently being used for active food preparation are covered / closed so as to protect from potential contamination.

(1) Observed build up of dust debris on fan blade guards on cooler unit in walk-in refrigerator and/or freezer. Improve cleaning frequency so as to prevent a visible buildup of dust debris.

(2) In the kitchen food prep area, observed a significant accumulation of food debris in the floor sink beneath the three compartment sink. Increase cleaning frequency so as to prevent the accumulation of visible residue and so as to minimize the potential for vermin attraction.
