The non-food-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Equipment shall be reassembled so that food-contact surfaces are not contaminated.
Observed 1+in of iceing on the chest freezers used to store ice cream for sale. De-ice the freezers to prevent cross contact of ice from freezer walls (unsanitized) contacting prepackaged food. Iceing also caused damage to the unit. 0162 COMMISSARY / PREPACKAGED ONLY / NO PREP

Dressing rooms or dressing areas shall be provided and used by employees if the employees regularly change their clothes in the facility.

(113980, 113982, 114021-114031, 114035, 114041) 7.00 If food is from unapproved, unsafe, or otherwise unverifiable sources, the food shall be voluntarily discarded or impounded. Observed facility had open food from an unknown source which was "for personal use" When inspector arrived facility moved all open food away and into a freezer. On facilities instagram it was observed that they were advertising sale of open food to the public. 3-30-2026 All food contact surfaces of utensils and equipment shall be clean and sanitized. A food facility shall not be operating if there is gross contamination of food contact surfaces that may result in the contamination of food products. Observed scoops(used), tongs, measuring cup, ice crush machines, pots, blenders and counter top oven( unused). stored at the facility. Remove all equipment which can be used for food prep from food facility. All equipment used for food prep is required to be washed rinsed and sanitized in a 3-comp sink with proper sanitizer in room with smooth, durable and easily cleanable floor walls and ceilings with a 3/8in cove. 8-15-2024 Failure of the person operating a food facility pursuant to a variance or HACCP plan to designate at least one person to be responsible for developing HACCP plans, verifying that HACCP plans are effective, and training employees to adhere to the designated HACCP plans. 1.00 A HACCP Plan is a written document that delineates the formal procedures developed for safe food handling approved by the National Advisory Committee on Microbiological Criterira for Foods (114419). A written document approving a deviation from standard health code requirements shall be maintained at the food facility. (114057, 114057.1, 114091(f)(3))

The person operating a food facility pursuant to a HACCP plan shall designate at least one person to be responsible for developing HACCP plans, verifying that HACCP plans are effective, and training employees.

A minimum of one person per shift shall be designated who is knowledgeable in the HACCP plan or plans adopted by the operator to be responsible for adherence to any HACCP plan used, take corrective actions when necessary, and assure monitoring records are appropriately documented and retained, per the requirements of section 114419.
