All food facilities shall be kept clean, fully operative, and in good repair. Floor surfaces in all areas in which food is prepared, packaged or stored, where any utensil is washed, where refuse or garbage is stored, where janitorial facilities are located, and in all restrooms and hand washing areas shall be smooth and of durable construction and made from non absorbent material that is easily cleanable.
Each permanent food facility shall be fully enclosed in a building consisting of permanent floors, walls, and an overhead structure that meets minimum standards. Food facilities that are not fully enclosed on all sides and that are in operation on January 1, 1985, shall not be required to meet the requirements of this section until the facility is remodeled or has a significant menu change or a change in its method of operation. Observed that facility was using hot dog warmer to hot hold food. food inside was temped at 106F and 114F. When asked staff confirmed that normally food is time controlled however the stickers were not currently available. This unit has not shown it can hot hold food. Cease storing Potentially hazardous food in this device until a recorded time control method is being practiced or unit is shown to hot hold consistently at 135F all out of temp food was VCD'd CDI

1. Observed Bunn holder had builduip of crumbs and debris and didnt have any bread. Increase frequency and efficacy of cleaning. All equipment and food contact surfaces shall be kept clean and sanitized. 2. Observed catch trays of coffee and soda equipment were overflowing and had not been cleaned recently. Increase frequency and efficacy of cleaning this equipment and their catch trays. 3. Observed oven behind counter had grease and debris accumulation. grease from oven has caused concrete below to strip. Equipment and food contact surfaces shall be kept clean and maintained in good condition. Increase efficacy and frequency of cleaning/removing grease. 4. Observed Microwaves underneath hot dog warmers had grime buildup inside and on front. Equipment and food contact surfaces shall be kept clean and maintained in good condition. Increase efficacy and frequency of cleaning 5. Observed nitro/coldbrew machine with lights was out of order. Repair or remove. Equipment and food contact surfaces shall be maintained in good condition. 6. Hot Dog hot food holder closest to nacho/chili dispenser kept pushing food off of equipment onto the counter behind the equipment. Evaluate/Repair to prevent food from falling off and being contaminated.
