Observed sponge in the three compartment sink. Sponges shall not be used in contact with cleaned and sanitized food-contact surfaces or in-use food-contact surfaces. Clean and sanitize all contaminated utensils and other surfaces. Discard all food which has been in contact with contaminated surfaces.
