1. Observed walk in units epoxy has started to wear and chip. this may require repair if it can no longer be kept clean. continue to evaluate.
2. Observed large amount of vegetable debris on the floor in the back storage rooms, especially in the go back areas. would suggest increase frequency of cleaning in these areas

1. Observed that when inspector arrived that staff present noted that management had left and nobody would be able to assist me until he returns. it appears there was somebody in charge while i was at the facility .ensure all staff are aware of the current person in charge at all times.

An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be available to the food handler. A thermometer +/- 2°F shall be provided for each hot and cold holding unit of potentially hazardous foods and high temperature warewashing machines. (114157, 114159)

Have a thermometer accurate to within 2°F or 1°C in each hot and cold holding unit. Have a metal probe type thermometer readily available on premises (to all appropriate staff) that is calibrated in accordance with the manufacturer's specifications as necessary to ensure accuracy.
Observed all three walk in refrigeration units do not have thermometers. Have a thermometer accurate to within 2ºF or 1ºC in each refrigeration unit, as practicable. Note that product mimicking sensors placed in devices located in the warmest part of the mechanically refrigerated unit may be approved in lieu of an ambient air sensor. Have a readily visible thermometer affixed to the warmest part of the refrigeration unit.
