Observed dish machine temped at 108F max temp. Dish machine shall have a minimum temp of 120F repair.
2. Observed that both dipper wells temped below 135F(126F & 130.8F) and did not have running water to flush out debris. Repair units to provide a minimum temp of 135F. (no dishes served at time of inspection.

The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other debris accumulations.

Keep all food facilities, and all utensils, display cases, windows, counters, shelves, tables, refrigeration units, sinks, dishwashing machines, and other equipment or utensils used in the storage, preparation, sale, service, and display of food, clean, fully operative, and in good repair.

The non-food-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Equipment shall be reassembled so that food-contact surfaces are not contaminated.
1. observed service window was not self closing. all service windows shall be self closing, repair.
2. Observed fly fan at service window was turned. off. When service window is larger than 216in2 it shall have the fly fan turn on when open. CDI.
3.Observed foil being used to keep kitchen cooking equipment clean. foil is not a smooth easily cleanable surface. cease this practice and increaser frequency and efficacy of cleaning.

Any hose used for conveying potable water shall be of approved materials, labeled, properly stored, and used for no other purpose.
