The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other debris accumulations.

Keep all food facilities, and all utensils, display cases, windows, counters, shelves, tables, refrigeration units, sinks, dishwashing machines, and other equipment or utensils used in the storage, preparation, sale, service, and display of food, clean, fully operative, and in good repair.

The non-food-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Equipment shall be reassembled so that food-contact surfaces are not contaminated.
1. 3 compartment Sink was observed to have rubber sealant applied around the base where the seams of the basins would be. The sealant does not appear to be standard for the model and is creating a surface that does not appear smooth or easily cleanable. Provide the Manufacturer provided specifications sheets for this sink showing that the rubber sealant is an integral part of the sink or remove the sealant to provide a smooth easily cleanable surface. Provide specs or remove sealant within 60 days.

So long as... a hood is installed if requested by MCDEH in the future AND the ceiling is maintained properly to prevent the buildup of grease AND the equipment remains smooth & easily cleanable and doesn't accumulate grime.
